Our Beef is Seasonal

We sell beef by the quarter/half/whole, meaning you can buy anywhere from 25% to 100% of an animal. We only harvest July through November when animals have had at least 90 days on green, growing grass to ensure the maximum flavor and nutrient value of our meat. We coordinate our harvest with the butcher and you pick up cut and wrapped meat from the butcher. 

We offer three levels of pricing. Please note these prices DO NOT include the butcher fees, (cut and wrap and a kill fee, which varies between butchers) which you will pay separately to the butcher when you pick up your beef.

2026 options and prices:

Premium Grass Finished: These are animals born on our ranch, and we can tell you exactly what they have had to eat (grass, sea kelp, salt), and what they haven’t (grain, antibiotics, growth hormones) from birth to harvest. These cattle are heritage breeds - smaller framed with genetics that fatten really well on our premium pastures - cattle your great grandparents would recognize. Because of their smaller frames, the portions are smaller, so expect whole animal hanging weights in the 450 lb range. These animals are only harvested in the Fall, at between 18 and 26 months, and are the only animals we offer a 1/4 share of. Please notes 1/4s are only available with Mountain View Custom Meats and they have a set cut list for 1/4 animals. If quality is the most important thing to you, this is your product.

  • 2026 Pricing for these are: $6.75/lb for a whole, $7/lb for a half, and $7.25/lb for a quarter.

Grass Fed: These are young animals that we buy in the late Winter and early Spring from local ranches. We finish them on our premium pastures where they only get grass, sea kelp and salt. These animals have larger frames and more conventional genetics, so expect whole animal hanging weights in the 500 - 700 lb range. These would be the same genetics you’d find if you went to the grocery store or Costco, and produce terrific steaks, roasts and burger. If you want a blend of quality at a more affordable price, this is your product.

  • Pricing for these are $5.75/lb for a whole, $6/lb for a half.

Grass Fed Burger Cows: These are middle aged and older cows that are getting retired. They are only fed grass, sea kelp and salt but will have the least amount of fat and will be the least tender, but the most flavor, and still very good. This is our best option for ‘bulk beef.’ The hanging weights are usually bigger, and it’s a great way to fill up your freezer and feed a family. We recommend taking the best steaks (New Yorks, tenderloins, rib steaks), taking a couple of roasts (chuck roast, brisket) and grinding the rest of the animal into some amazing hamburger. If you’re looking for value at the lowest cost, this your product.

  • Pricing for these are: $4.75/lb for a whole, $5/lb for a half.

**all prices are for “hanging weights,” which is the weight of a hot carcass (animal after skinning, beheading, eviscerating – think the classic picture of carcass hanging in a butcher shop)

***if you buy a quarter animal, you will have some limitation in how the butcher can cut it up for you because a quarter is a half of a half which is not symmetric front to back on an animal

We love working with animals and grasslands. We believe in working hard, eating well, and building something meaningful through hard work and sharing those values with our kids and community. We're a little bit ranchy, a lot regenerative and a bit permaculture. Regenerative agriculture is our passion, and we strive to share a world that is healthy for all creatures to live in. Location

Castle Rock Ranch

The base of our operations is at Castle Rock Ranch, which is located on Old River Rd above Kingston Idaho. We also run a summer camp for girls age 9-14, and host weddings and guided trail rides. We love visitors but please let us know ahead of time when you plan to come.
